What’s a good way to stay cool and fulfill your appetite you ask? Why not try a nice refreshing cold Melon and Cucumber Soup?
It’s a good way to utilize light, fresh and tasty summer time produce in a creative yet easy way. Cucumber and melon are two things that really compliment one another and bring out great fresh clean flavors. You can also try using “Watermelon Cucumbers” as a fun alternative to regular or English Cucumbers to impress family, friends and co-workers.

Quick tip: For all those sweet & salty fans out there, I suggest you try garnishing your soup with a light sprinkle of Sea Salt and or Kosher Salt.
Recipe:
Yield: 2 ½ cups
2 cups Chopped Honey Dew Melon
1 Cup Chopped Cucumber
(or watermelon cucumbers if available)
1 Lime zested and juiced
7 mint leaves (reserve 2 for garnish)
2 Tablespoons Sugar
(or 1 tablespoon sugar substitute such
as Splenda)
½ cup of water
½ cup finely diced Cantaloupe melon for garnish
TT sea salt (if desired)
Combine Honey Dew, Cucumber, Lime, Mint, Sugar and water in blender and puree until smooth. Refrigerate for a minimum of 1 hour or until chilled. Pour and garnish with diced Cantaloupe and salt(if using).
